Healthy 5 Ingredient Cookies

This recipe is one from a vegan blogger I follow named Erin Ireland and I’ve been making it for a few years now. These cookies never last long in my household and are a yummy ‘any time of day’ type of cookie as they aren’t your typical sugar-filled sweet. They only require 5 ingredients that you’re bound to have already and take under 20 minutes to make.

As an athlete, I’m constantly on the look out for easy snacks packed with protein and carbs. I’ve tried many energy and protein bars throughout my swimming career but have never found one that I thoroughly enjoy and that I feel provides the proper mix of ingredients to keep me feeling good at a swim meet or after practice. Between the peanut and almond butter, oats, and bananas, these are a perfect match and they don’t leave me feeling too full either.

To prepare these cookies, all you need is a mixing bowl, measuring cups, a spoon and a cookie tray. The ingredients include oats, mashed bananas, peanut butter or another nut/seed butter, maple syrup, and chocolate chips. They are however very adaptable and you can choose to add other ingredients such as vanilla, sea salt, raisins shredded coconut, or any other nuts, seeds and dried fruit you desire.
