Cabin Life Tacos- What More Could You Ask For?!

Cabin time is a favourite for us all! It’s time to relax, rejuvenate and spend quality time with loved ones in nature. In many cultures, food is a way to bring people together, to celebrate special moments, communicate and share about our days. For myself and my family, dinner is a time for us to all sit down together and enjoy each other’s company. We are all living very busy lives between work, school, sports and our social lives and dinner seems to be the only meal we can all eat together most nights. I am lucky enough to be quite close with my partner’s family as well, who owns a beautiful, country chic lake house on Kemp Lake in Sooke. When the sun comes out, this place lights up and radiates peace. Fish tacos are a fun hands-on meal to make, that are relatively simple and a crowd pleaser. Since growing up on the west coast in a family full of fishermen, we have always had a love for fresh fish! This meal was inspired by combining a classic meal with a fresh, summertime feel to it. The ingredients needed to create our fish tacos were:

  • Corn tortillas
  • BBQ salmon seasoned with salt and pepper
  • Green cabbage
  • Tomato
  • Avocado
  • Cilantro
  • Cheddar cheese
  • Mango salsa
  • Homemade ranch sauce

My favourite aspect of this recipe is the mango salsa because its full of fresh, delicious, brightly coloured ingredients which gives the dish an amazing pop of flavour. This salsa is a combination of chopped ripe mangos, tomatoes, red pepper, purple onion, cilantro and lime juice.

Cooking is a great way of getting everyone in the family involved, to work together and create something that everyone can enjoy. For children especially, this is a time for them to practice fine motor skills such as cutting, mixing, combining and grating. It gives them responsibility and promotes learning new skills, with a product to share with others at the end. Cooking and baking at home are great ways to practice and promote math through measurements, social skills, life skills, bonding, and carrying on family traditions.

And here’s the final product! Everyone loved them and kept going back for more! It was a wonderful evening spent with good food and even better people.
